Easy Ice Cream Cake

Ya know those weekends where you accidentally get VIP passes to a yoga convention and find out after Day 1 post-yoga beers that you need to bring dessert to a dinner party at the end of Day 2? Make this cake. Or make it any other time you’re physically exhausted, have a bit of a buzz going on (i.e. gas stove top and oven are a bad idea), and have minimal time before you go to bed to create a dessert. It’s another 10-minute 4 ingredient dessert.

Easy Ice Cream Cake

Time: 10 minutes active time plus freezing

Ingredients

  • Tub of ice cream (any flavor)
  • 12 ice cream sandwiches (any flavor that goes with tub of ice cream).
  • Hot fudge topping (or caramel if you’re feeling crazy)
  • Cool whip

Step 1: Take half the tub of ice cream and spread on the bottom of a cake pan (I’ve used a bread pan in the past and it works well for smaller portions or 2 cakes with different ice cream flavors).

Step 2: Layer unwrapped ice cream sandwiches on top of the ice cream. Cut/eat any excess as needed/desired.IMG_3940

Step 3: Layer the rest of the ice cream on top of the ice cream sandwiches. If you have time/patience pop in the freezer to set up a bit.

Step 4: Heat the hot fudge until it’s a pourable consistency and pour on top of everything. If you didn’t freeze after step 3 it will turn into a bit of a melty mess but it will look and taste the same in the end.IMG_3941

Step 5: Freeze until it sets (I ate dinner and then returned about 30 minutes later).

This is a really easy make ahead dessert as it keeps well in the freezer and is resilient to transport (e.g. won’t spill, doesn’t need to be served warm). Take it out a few minutes before serving to make cutting easier. If you want to get fancy serve with extra ice cream topping and/or decorate with sprinkles. I obviously did not have time/patience/creativity to do anything other than put Cool Whip on top, but I was too busy licking the spoons (ice cream! hot fudge! Cool Whip!). And ya know what? So were our friends who ate it the next day.IMG_3943
